More cooking adventures

I wound up with a lot of cilantro from last week that I bought for white-bean chili, so in trying to use it up I found a recipe online that uses it for chicken, and I'm cooking it now.
It smells delicious! I can't wait until it's done, and I've got to wait another half hour. I'm also making some couscous with chicken broth and some peas.
And just in case you're interested here's the recipe (I obviously modified the amounts of stuff since it's just me here right now). I added it to my handwritten recipe card collection as well.
1 1/2 lbs. chicken pieces, skinned
1 (15 oz.) can tomato sauce
3/4 c. fresh cilantro
1/2 c. chopped onion
1 med. clove garlic
Place chicken in baking dish. In blender*, mix tomato sauce, cilantro, onion, and garlic. Pour over chicken and top with green bell pepper rings**. Bake at 350 degrees for 1 hour 15 minutes.
*I used my mini food processor instead, and it worked just as well
**I avoided this step since I don't like peppers.
