Okay, still have some kinks to work out. I was wondering why it was that the soba sauce seemed to have only half of what I originally put in the pot, before I realized that I hadn't covered the pot with a lid.
Doi! Evaporation, accelerated by the heat of the burner. Luckily I still had that dashi stock and could just replace what was lost and reboil it, but that was pretty dumb. It does mean that the sauce is more sweet and will be thicker, but still.
Oh well, at least I've never managed to poison anyone yet. Though I was very glad I checked the expiration on the mayo I tried to use on some sandwiches yesterday before I sent myself or someone else to the hospital from food poisoning, since it expired in February. Whoops. Narrowly averted, but my poisoning record is still clear.
